Utilising a 304-grade stainless steel, the Kombucha FV 750L is a specialised variation of our temperature-controlled fermentation tank. This fermenter was initially was created for use in a Kombucha brewery, where the main purpose is heating instead of cooling.

A regular beer yeast reacts with sugar to create alcohol; from this, heat is given off which can may spoil a beer if the level reaches above about 30°C. On the other hand, a Kombucha yeast, otherwise known as a Scoobie, doesn’t emit heat like this and instead needs a temperature of 30°C to ferment correctly. This means that if conditions are cool, it may be hard for the fermentation process to finish.

The system we developed is ideal for delivering smaller heat levels, as it is able to pass warm water through the stainless immersion panel in the fermenter, gradually raising the fermenting temperature. Delivering a gentle heat is ideal in ensuring that the yeast cells aren’t killed, which is likely to occur if using a heat source like that which is used in our boilers and hot liquor tanks.

The system is fully automatic and self-contained, which means that no external input will be necessary. In addition to this system being ideal for Kombucha or Kefir brewers, it has also been used successfully in other industries where delivering a gentle heat is important.
